Unlock I-12 Device

I’m an experienced software and game developer. My daughter has special needs and uses an I-12 device. I have built a simple game that she can play with her eyes, however, I am unable to install some dependencies for the game so I can’t play, test or debug on the device. I want to experiment with both using mouse emulation as well as developing directly against the SDK.

How can I safely unlock her device or create a special Admin account so that it can be re-locked when her therapists and teachers use it? I see that it has InTouch software that may be locking features but none of the docs I can find have the password.
